We are a small wholesale commercial operation in business on Cape since 2009. We have secured a major grocery chain in addition to our existing accounts and need to move to a larger space in order to fulfill our expanded summer orders. The space at 23 White's Path, specifically Unit 23T, a 20' X 70' space will suit our purposes. Most of the space is needed for cooling and packing tables. Recipes are small batch, yielding 2-3 dozen cookies per batch. We use table top mixers. The cookies are rolled by gloved hand and placed on parchment- lined baking sheets. When the cookies are done, they are removed from the baking sheets and the parchment is disposed in our trash. The baking sheets are wiped off with paper towel and reused. The cookies are cooled and then later bagged in our signature cellophane lined paper bags for immediate delivery. We will be using the following equipment: *Commercial HE ( High Efficiency) Dishwasher ♦ Electric Table Top Double Oven ( Will be on metal table) ♦2-3 Hand Mixers Table Top ♦2 Commercial Refrigerators ♦ 1 6ft Freezer *Standing Baker's Cooling Racks Our only "garbage" is eggshells. Everything else is paper or cardboard bags, wrappers or boxes our ingredients come in. We buy in bulk. Currently we employ 2 part-time bakers and are adding another 2 for Summer. Shifts are rotating over a 12 hour period during July -September 5 days a week. Otherwise, off-season, we operate 7-2pm 3 days a week. At the end of the day, all baking sheets, mixing bowls and utensils will be run thru a HE Commercial Dishwasher for cleansing and sterilization. You had given us a daily maximum of 250 gal/day water usage at this location. We are confident we can operate well within this confine.
