Touhey began The Cape Cod
Cookie Company in 2009.
Christmas in 2008 was what
she describes as "a humble
Christmas." Lacking a lot of
cash, they decided to give
family members tins of home-
made cookies. Everyone loved
the cookies and encouraged
them to start a business.
"We put up a website and
we started selling to friends
and family," Carrie -Lee Touhey
says."And then we got into
our very first farmer's market,
which was Mahoney's Garden
Center winter market, and we
were sold out in two hours."
She says that getting certi-
fied for a home food license
can be hard and there were
plenty of obstacles along the
way. At first the Barnstable
Board of Health simply said
no. Rather than walking away,
she asked them what their
reasoning was and was told
it was a zoning issue. Touhey
then went before the Zoning
Board of Appeals and they
said yes. Since she was not
selling cookies out of her

might as well keep the result-
ing recipe just as easy, or
what's the point? The fillings
suggested here can be swapped
out with any number of ingre-
dients.
Caveats: The recipe is for
one rollup; because the egg is
cooked in two 1-minute phases,
you can be filling one while
the next one starts cooking.
Be careful not to get too much
of the giardiniera's liquid onto
the egg or it won't set. Also, I
use a slightly cupped Corelle
saucer (easy to find at thrift
stores), but any microwave -safe
saucer no larger than 8 inches
in diameter will do the trick.
Finally, key to easy cleanup:
Use nonstick spray or a little
oil on the saucer; it makes the
egg easier to remove - and the
plate faster to clean.
