This is in response to your memo of April 6, 2006.
1. There are several outdoor refrigerators/freezers used by restaurants. All food
products must be covered within the unit and during transportation to the restaurant.
2. The owner has not stated if he is planning to put a door in front of the trash
container. There is no Board of Health regulation on screening dumpster areas.
3. The owner inquired about paving the parking lot. I informed him that the covers
to the septic system would need to be brought to grade (and not paved over). I escorted
the owner to the Engineering Department to meet with Tim Myland regarding any
engineering regulations concerning drainage. I believe a person can pave an existing
parking lot without bringing the parking lot up to today's standards which would require
drainage, trees, buffers and striping. Possibly the above points could be a condition of
the liquor permit.
The owner at this time did not expect to reopen the front outdoor caf6 with liquor nor
open the second floor guest rooms. I did inform the owner and manager that a pre -
opening inspection would be required by the Health Department.

HEALTH DEPT.
After the liquor license hearing held with the Board of Selectmen on April 4, several
issues were raised which I believe you would need to be involved in.
There is a refrigerator/freezer in the back parking lot which is being used by the
restaurant staff to store food. The refrigerator/freezer is not enclosed and has no entrance
from inside the building. Could you let me know if this is legal? Do you know if the
owner is going to not only enclose the trash container on three sides but have they
requested to put a door in the front? My understanding is that a business can pave over
the septic system and I understand that the new owners of 134 Route 6A have indicated
they would like to do so. Have you received any plans or requests? The problem may be
on paving with drainage as there has been a drainage problem and a stonewall was built
in the back of the parking lot to stop runoff from going into the system.
I would be happy to talk with you about these issues at your convenience to provide
additional information which you may need.
