July 2, 2003 Mr. Bruce Murphy, Director of Health Town of Yarmouth 1146 Main Street South Yarmouth, MA 02664 Dear Mr. Murphy, Pursuant to the changing needs and expectations of our guests I would like your permission to operate a small, 10' x 14' grilling counter adjacent to the patio at the Riviera Beach. The attached menu sign represents the few items to be offered and it is exactly like our sister property the Red Jacket Beach. The operating hours will be from noon to 3:00 or 4:00 daily depending of course on the weather. The direct operation will be under the hand of our Chef and kitchen manager Claude Armeen. He is a registered qualified food handler. All preparation work will be done in the kitchen proper and will be delivered to the grilling area as needed.
