RE: Foodservice Variance
Board of Health Meeting, March 18, 2002
Dear Mr. Moore:
This is to confirm the vote of the Board of Health taken at their meeting of March 18,
2002. The Board voted to allow outdoor cooking at the Red Jacket this summer under
the terms set forth in your letter to the Board dated February 26, 2002 with the following
additional restrictions:
L Hours of operation will be from 11:00 AM to 5:00 PM from
Memorial Day through Columbus Day.
2. Food (hamburgers and hot dogs) will be cooked to order.
3. The area must be on a concrete slab and a canopy must be over
the food prep area.
4. Variances will expire after Columbus Day weekend.
5. Variances will be granted on a yearly basis and must be applied for
in writing each December. The variances will be reviewed by the
Board to determine if they should be revoked, modified or
renewed.
6. The kitchen chef who holds a certified foodhandler certificate must
oversee the operation.
