Hi Tim,
We spoke on the phone last week about me needing permission from my landlord to open a
residential bakery. I emailed Chris Fernsebner, one of the property owners, and he has given me
permission - as you can see in the forwarded message - as long as I remain responsible for any
necessary oven maintenance.
I have copied Chris on this email in case you need anything official from him. Please let me know of
there is anything else I need to provide in order to comply with town regulation.
Thank you,
Anna Wimmer

Hi Anna,
This sounds great and exciting.
I don't have a problem with it at all.
If anyone did complain about smells or anything (they'd be crazy) then we'd have to address it. Also
have a concern about the oven/range. It's not meant for any type of commercial use. I think that if it
needs repairs or replacement that would have to be on you. I think if you can agree to those two
things we've got a deal.
Thanks for reaching out.
Chris

Hi Chris,
Just to reintroduce myself,I am Anna Wimmer,and I live in Ravenswood,apt 505.
I am hoping to get your permission to use my kitchen for a small sourdough baking
business.I would be baking a couple of days per week to sell bread and a few confections
at a local wine shop.No customers would be coming through the complex, and there
would be no solicitation at all.The only business activity taking place would be the actual
baking and packaging of my products to take to market.
I have an LLC that I will be working the business under, and I have a certificate of insurance
with a$1 M umbrella policy included. There will be no excess noise coming from our unit
(baking is quite peaceful and relaxing, actually),I am not making any changes to the house
and I will be complying with all town and state restrictions(which includes no customers
at the property per zoning bylaw and a yearly inspection of my kitchen by the BOH).
Owning a bakery has been a dream of mine for a very long time, and starting from home
would allow me to break into the business.I would be so grateful if you would grant
permission to make that dream a reality.
Thank you,
Anna Wimmer
