Dear Bruce,
This is Kris,the franchisee of Domino's Pizza in South Yarmouth. First, I would like to thank you for your time at
the meeting last week.
Unfortunately, Domino's Corporation will not be able to provide any information about the waste water because
they haven't done any studies on the subject.
I would like to reiterate briefly what we wash at the store that I mentioned to you at the meeting.
*All prep plastic buckets and lids are being washed once per day, including 3-5 sauce buckets.
*All pizzas,with the exception of pan pizzas,are made on screens that are not washed.
•The pan pizzas are a very small part of the business and they are made in 12 pans.These pans are being
washed once a day Sunday to Thursday and twice a day Friday and Saturday.
*There are about 30 pans for bread items and they are being cleaned once per year at Pan Glo Cleaning(508-
791-9595)in Worcester.
Also, I contacted John's Sewer&Pipe Cleaning from Woburn (781-569-6695)that service our current location.
They clean the current grease trap quarterly and they stated that the removed grease is about 10-15 Lb. If
