Subject: Bass River Restaurant Outside Grilling

I am asking for you to approve the preparation of a limited menu of food items on our
commercial grill on the outside patio on up to two days weekly for the 2010 Golf Season. We
have made adequate provisions in facilities, training, and equipment to insure safe food
handling in the process. Food will be removed from our inside refrigeration and put directly
onto the grill where it will be fully cooked and if required, held at the required holding
temperature.
Outside preparation will enable us to provide timely preparation for our groups of golfers who
often visit the Cape. This ability will enhance our ability to attract and to retain these groups.
Thank you for your consideration. I plan to attend your June 21, 2010 meeting to answer
questions and to provide additional information regazding our facility and setup.
