The work done to date has not been done in the kitchen, so I had not contacted you yet. I have only addressed the windows and replaced the carpet with tile and I have obtained the permit for that. I have not received an actual "plan" for the kitchen from Mr. Moran, but i was prepared to make sure that prior to commencing work on it(other than the tearing out of the junk that was in there). We are aware that permits are required for pluming, electrical , etc. I will check with Jim on the ovens, I saw these units operate at the PGA show in Orlando and the big selling point was that a hood system is not required, but I will sure check with him. We are up to speed on the smooth surtaces for the kitchen wafis and I cannot imagine that replacing the ceiling tiles is any problem. 1 am surprised to hear about the kitchen floor, Dave and I discussed it at length and we went back and forth trying to come up with a surtace that could be cleaned adequately and at the same time would not be too siippery when wet. I agree that it certainly hasn't been kept clean. I hope that we can possibly seal it and pay special attention to its cleaning. In any event, 1 will talk to you tomorrow, and I will also get a written plan from Mr. Moran regarding his remodeling plans, for your approval, as well as for the purpose of pulling the required permits. Outdoor seating is proposed for 24 to 30 as I understand. There is no proposal to serve alcohol on the patio, but there is a request to allow for its consumption out there. This is no departure from what the previous concessionaire's operation in that regard. Piease call me, so we can meet in the Heatth Department to discuss the renovations. �ets try to meet tomorrow Thursday. It appears a new floor in the kitchen area is needed. The last floor that was installed is not a smooth surtace. The kitchen ceiling tiles need to be replaced with washable tiles. The walls must have a smooth surface, such as marlite or smooth white board. The floor in the new bar must also be a smooth surtace. You must check with the building department if the new turbo counter top cooking units must be under a hood. 2/21/2008 Page 2 of 2 A plumbing permit will be needed for the new 3 bay sink and dishwasher behind the new bar, and for relocating the kitchen 3 bay sink. A floor plan and kitchen equipment listing plan should have been submitted for review to the Health Dept. prior to any kitchen renovations. Is outdoor seating or serving of aicohol proposed?
