If there are lwo noules on the machine being used each one would have its own test. The lwo tests that must be done are Ice Cream Coliform, and Standard Plate Count. The machine must be thoroughly cleaned to the manufacturing directions. If you plan on having soft serve ice cream for next season please let me know a little in advance. It would also require a health department Frozen dessert permit, which is $40. If you should have any other questions please feel free to contact me. Thanks, i Philip J.
