HomeMy WebLinkAbout2002 Jun 05 - Letter to China Inn Re: Violations/Problems June 5,2002 Mr.Danny Chow Chiva Inn Restauiant 981 Rt.28 South Yarmouth,MA 02664 Dear Mr. Chow, On May 1,2002,I reviewed your old inspection reports and i felt that an inspection of your restaurant was necessary. I performed a comple[e inspection and found the following Health Code Violaflons/Problems: 1. The floor had a general build-up ranging from minor to major and was espeecially bad under the dis6 machine. I recommended a good,thorough cleaning of the floor and baseboazds using hot soap and water. 2. The dish machine leaked at the detergent feed and the rinse pmduc[was low enough for the alazm to sound T6e iinse temperat�ue reached I80°F only after Sve consecutive tuns. I informed you that the technician was nceded to fix the leak and tum up the boos[er to maintain proper tempetatures. 3. The hood fans Lad major build up and needed cleaning immediately.Hood filters were missing from the main cooking area in front I explained the need to Lave all filters installed and the requirement to have a clean hood fan. 4. The dry storage area was extremely cluttered and was in need of sfraightening out I e�cplained that the floor around the flour bags would attract vermin. I informed you tLat all these violations would nced to be rectified and that I would be back within two or tlu�ee weeks. I re-inspected your resfauiant on June 3,2002 and found the following: 1. The floor was in the same condition as the previws inspection I noticed cracked and loose tiles that I did not notice before. 2. The dish machine was still leaking,low on rinse agenY as indicated by the alazm,and the rinse tempereture never made it past 150°F. 3. The hood fans were in worse condition than before;grease had collected in long l�anging stiands on the Ansel unit piping.This was a Fire Code violation. 4. The dry storage area was in the same condition as before. 5. Potentially Ha7ardous Foods(PHF's)in the middle walk-in re&igerator were not dated. Clricken and bcef were at an acceptable temperature but it was not clear how long they had been refrige�ated. 6. An employee(Asian,50's,female)was cooldng behind the line and was witnessed as leaving her unwrapped food on a cutting board at the line.TLis is crosscontamination and a serious Health Code ViolaUon. These Heelth Code Violations and Issues need to be addressed and you are ordered to attend an Admiuistrative Hearing scheduled for Thuraday Juue 13,2002 at 11:00 am.in the Health Deparhnent Director's OtTice. Please pmvide written documentation concecning a repair schedule and general cleaning schedule for the kitchen.
